Beyond Iguana Bits and Dubious Food

Recipes you can craft in your dorm or tiny apartment.

New Ramen Plus
In the bottom of a microwave-safe bowl, mix:

  • 1 dollop peanut or almond butter
  • 1 splash soy sauce
  • 1-2 squirts sriracha
  • Ramen seasoning packet to taste

Add dry noodles and enough water to just cover them. Cover bowl with upside-down plate or damp paper towel. Nuke on high for 3 minutes.

+1: Add a handful of frozen spinach, peas, or edamame (or swirl in one raw egg), then cover and nuke for another minute.

Overnight Oats
Get a few clean, empty containers (mason jars, plastic take-out tubs, upcycled jam or coffee tins).
Add to each:

  • ½ cup rolled oats
  • ½ cup milk of choice
  • 1 tablespoon chia seeds
  • Handful of frozen fruit and/or spoonful of jam
  • Dollop of peanut butter or Nutella

Optional: bit of cinnamon or vanilla

Stir well, seal tightly, and let sit in the fridge overnight. Oats will keep for about four days.

+1: Add a scoop of protein powder and a little more milk, or a spoonful of Greek yogurt to each jar.

Fancy Snacks
You can make a delicious, balanced, filling meal with random raw veggies, crackers, bread, deli meats, cheeses, fruit, and dips. Buy the dips if you want, but you can make these easy ones, too, for cheaper and healthier options.

1. Stir together 1 cup shredded rotisserie chicken, a few glugs of buffalo sauce, half a block of cream cheese, ½ cup plain Greek yogurt or bleu cheese dressing. Microwave until hot, stirring occasionally, and serve.

2. Heat a small pot over medium heat. Add 1 tablespoon olive oil and saute ½ chopped onion until soft and translucent. Add 1 teaspoon minced garlic and stir until fragrant. Add 1 jar drained marinated artichoke hearts; cook until heated through. Add 5 oz frozen spinach; cook until heated through. Add ½ block cream cheese, 1 cup of plain Greek yogurt, dash of hot sauce, and ½ can drained white beans. Heat through and serve.

3. Follow first three steps of previous recipe. Add 2 cans drained black or pinto beans, a few dashes of hot sauce, ½ taco seasoning packet, a chopped tomato or 1 tablespoon tomato paste, ½ cup water, and stir. Cook until hot, smashing some of the beans until you like the texture. Sprinkle w/ shredded cheese and cover until cheese melts.

+1: Add some tinned fish! Sardines, smoked mussels, and mackerel are all the rage for their versatility and nutrition.

Rice + Beans = Complete Protein
Did you know that you can cook the rice and beans together in one pot? This is a meal on its own, but you can use leftovers for endless options, like burritos, bowls topped with dining hall remnants, or soup.

Bring 1 cup of water or broth to a boil.

Add a chopped onion (optional), 1 can drained beans (your choice), and a few pinches of salt.

Cover and cook over very low heat for 20 minutes.

Taste and season as necessary.

+1: At the end of the cooking time, plop a handful of seasoned raw shrimp or cubed tofu and small florets of raw broccoli on top of the rice.

Do not stir! Cover and let steam for 5 minutes.
