3 Simple Meals
Meal 1: Sheet Pan Shake-Up
Think of a sheet pan as having three sections. Put three different things in those sections, all of them individually tossed in a bowl with salt, pepper, oil and an all-purpose seasoning. Roast at 375 degrees for about 20 minutes, or until everything is cooked through. Some combos that work great:
- Chicken breast, broccoli florets, sweet potato, barbecue rub
- Shrimp, zucchini, cherry tomatoes, your favorite spice mix
- Tofu, red onion chunks, chickpeas, everything bagel spice
- Meatballs of any kind, mixed bell pepper strips, button mushrooms, Italian seasoning
Meal 2: Dense Bean Salad
These salads have gone viral for a reason: they’re quick to make, endlessly adaptable, nutrient-dense and delicious. Plus, you can keep them in the fridge for a couple of days — just know that some ingredients break down quickly (like apples and cucumbers). The basic formula:
- 2 cans of beans, drained (use the same beans or different varieties)
- 2 cups of a cooked protein (rotisserie chicken, grilled steak, tempeh crumbles)
- 2 cups of prepared veggies (thawed frozen corn, peas, edamame, chopped tomatoes, etc.)
- ½ to 1 cup of something crunchy or crispy toppings (nuts, seeds, celery, tortilla chips, croutons, wonton strips). Add these just before eating to keep them crisp.
- Any homemade or store-bought dressing (or mix a scoop of leftover hummus with olive oil, salt and pepper, then thin it with water until pourable)
Meal 3: Snacks
Propaganda we’re not falling for in 2025: a balanced, nutritious meal has to be a perfectly plated dish or coherent recipe. Just grab stuff you enjoy and eat it until you’re satisfied — job done. Call it girl dinner, charcuterie, or just snacks. Baby carrots, cheese sticks, random crackers, that one pickle left in the jar, a handful of peanuts while you’re scrounging, a tin of sardines (propaganda we ARE falling for!), those sad wrinkly strawberries you forgot about in the back of the fridge, some slices of bologna with a squirt of ranch on the side: You literally can’t do this one wrong.
